Exchange with mailboxes setup with HM?

Is it possible to have a MS Exchange 2007 server setup seperately from HM mail systems, but still use the same mail boxes that are hosted via hostmonster but maintain the functionality of an exchange server?

Can this even be done?

I would imagine it can be done, if you move the MX records to the IP address of the exchange server. Of course, you will be responsible for the security and configuration of said email account and operations of the exchange server, but, I don't see why it can't be done ... in theory ...
