Hello.
I have a domain listed with a domain registrar that is not Hostmonster. I am currently using an e-mail address with this registar and wondered: If I change my nameservers to hostmonster will I lose my e-mail address?
Also, can hostmonster create new e-mail addresses for an add-on domain? If so, how many?
Thank you.

The simple answer is, I'm not sure. There are two terms that deal your question. The first is called the CNAME (Canonical Name/Domain Name). This is typically referred to as the nameserver for the domain name. It basically says to the world, "Hey, this is where you can find www.yourdomain.com".
The other term is call the MX entry. This deals with pointing to the server that is handling email for the domain name. Basically, the Email server is determined by the MX Entry.
Following this logic, if you change your CNAME entry for your domain name, your MX Entry should not be affected. This might be different between different registrars, so you might have to ask whomever you are changing entries for, but that's it in a nutshell.
As far as the number of emails allowed to you by HM, that information is clearly visible on their main site, www.hostmoster.com (http://www.hostmoster.com).
It says you have an unlimited number of emails allowed. Hostmonster will not create these emails for you. You will have to do it yourself, but you can create as many as you can stand.
